Can I start working while I wait for my CR card to arrive?

Currently I am living in the U.S. and am waiting on my conditional residency card to arrive. I have received my SSN and have a temporary I-551 visa stamp in my passport.

Yes, if you have a I-551 stamp in your passport, that is evidence of your permanent resident status so you are able to work.  This should suffice for I-9 purposes.  Once you get the card, simply present it to your HR person for them to note it in your file.
