What to do if my employer fired me over the phone for absenteeism?
They gave me 5 write-ups for the same issue at one time for days, even as far back as a month. When I tried to get unemployment benefits afterwards they lied and told the deputy that they fired me for a different reason and I was still denied for absenteeism. What are my options? Do I have a case against my job? Or can I appeal the vecs decision and win?

From what you have written I suggest that you appeal the decision where you were denied unemployment benefits. Given the odd circumstances that you have written about I suggest that you consult with a labor law attorney to see what legal recourse you may have against your former employer.
