Can a job offer be rescinded after I’ve been officially hired?

I received an email stating that they were not able to verify my former employer and asked for copies of either 3 pay stubs or a W-2 from that former employer. I am able to provide proof proof that of my former employment. However, they also asked for my HS diploma or transcripts but during my application process and interview, they were made aware that I did not have a diploma. The HR Coordinator called me and rescinded my employment due to not having a diploma. The next day, I received a letter stating,

You have no recourse. Employment in this nation is "employment at will." There is no legal right to a job; an employer may refuse to hire you, may rescind a job offer, or may terminate you at any time (including right after you start) at any time, for any reason. There being no guaranty of or right to a job, there is no recourse for not getting one or for having it taken away.
