Can I sue the county jail for keeping me past my out date?

If so, how do I go about doing so?

Under the laws of all states in this country everyone has the right to bring a legal action. However, based upon what you have written about, even if you filed suit, I do not see you prevailing under the law in that proving your damages in terms of dollars and cents seemingly would be difficult to do.
