What to do if I was interviewed at Loss Prevention for stealing candy?
According to them they have footage of me sliding the candy into my sleeve. During the interview the slowly convinced me that I did steal the candy and I signed the paper that I stole the candy and I had to pay for it. I know that I didn’t steal the candy. Is there anything I can do in this situation?

No, there most likely isn't anything you can do: the law presumes that people understand and agree to what they sign, and holds them to their signature. By signing that you stole the candy, you declared in writing that you did, and can be made to suffer the consequences, such as repayment, termination of employment, and possibly even criminal charges.
