Is it legal to record a conversation between an employee and a supervisor?

The recording of conversations is a matter of state law. In most states, all parties to a conversation must consent to its being recorded. In some states, however, only one party need consent. You can google either "all party consent to a recording" or "1 party consent to a recording" to find the applicable law in your jurisdiction.
Note If a supervisor is doing the recording, it is possible that the employee's consent was contained in company policy that they signed or it is allowed by virtue of the terms of a union agreement or employment contract. Otherwise, state law controls.
