If I co-signed my stepdad’s car loan as a minor but he got the car repossessed about 2 years ago, is there anyway I can take if off my credit since I was still a minor?

Unfortunately for you, under the laws of all states in this countrya judgment against a minor has the same legal effect as a judgment against an adult. The minor would be obligated for the judgment and the judgment very well would have a detrimental effect upon the minor's credit report.
