Will my contract between my business and a vendor hold up in court?
Essentially over the past year plus our company has dealt with a manufacturer
that has made sub par product and even misplaced or stolen product given to him
to print on. We came to a settlement for a payment and the vendor has not made a
single payment on the payment plan. We signed contracts for the settlement
including a page that says the vendor is liable for much more then the settlement
if the matter has to be taken to court.

While it's impossible for any attorney to answer 100% without reviewing the contract, since contracts are enforceable according to their plain terms, as a general matter, the answer is "yes": a contract or other agreement settling a claim or dispute is enforceable in court, and you could sue, if it is breached (as it evidently is) for whatever amounts the contract says you are entitled to.
