You must have the will signed by 2 witnesses. It is better to have witnesses who will not be inheriting from the will. The notary can be 1 of the witnesses, but it is not necessary to have a will notarized.
(In some states, you can have a valid holographic will, which must be handwritten and requires no witnesses. Holographic wills also do not require a notary.)
