What to do about taking a huge demotion for missing a few days of work?

I’m being forced to take a huge demotion for missing a few days of work due to car trouble. Both days were covered by an off duty employee as required with our company. Am i required to except this? If I don’t will I still qualify for unemployment?

You are required to accept it, unless you have an employment contract which guarantees your position or pay. (If you do, your company can only demote you in accordance with its terms.) That's because in the absence of a contratc, you are an employee at will and may be terminated--or suspended, disciplined, demoted, etc.--at any time, for any reason. Your employer has the right to do this.

Therefore, if you quit because of this--do not accept the demotion--you will be voluntarily leaving work and be ineligible for umemployment compensation.
