No; if you quit, you will undermine your claim to compensation *and* make yourself ineligible for unemployment benefits due to voluntary separation from employment. (But if you are leaving for a better job you have already located, then do it: legal strategizing takes 2nd place to doing what is right for your life.)
Rather, contact the federal Equal Employment Opportunity Commission or EEOC, which enforces the workplace anti-discrimination laws, and file a complaint based on the racist remarks and your employer's failure to address the situation.
