In Arizona, am I required to take a lunch break? It is not specified in my handbook of employment or code of conduct to do so. Also, AZ doesnt require employers to provide lunch break as well.

Whether or not you have to take a lunch is up to your employer. This is true unless doing skipping a meal period is permitted under the terms of a union/collective bargaining agreement or employment contract. Further, your treatment must not constitute any form of legally actionable discrimination. Otherwise, an employer can set the rules of the workplace much as it sees fit, including requiring an employee to take a lunch break. As an "at will" employee, you can comply with this requirement, complain and risk termination, or quit.
