I have recently been cut back on hours because my “goals” were not being met…but in the same token neither has any of the rest of the store and only one other employee has been cut but that might have been voluntary.

Texas is an at-will employment state. So unless you have a contract or are part of a bargaining unit, you can be fired with or without cause. In terms of your claim that there was job discrimination, I don't see an issue. If your hours are being cut because you aren't meeting your goals, well then maybe that is a type of warning to you.
