My employer changes my schedule every day. Some days they send me home early, sometimes they make me take 2 hour lunch periods instead of sending me home early. Is that legal?

Do you have an employment contract that probhits this action? If not, then you are what is called an "at will" worker. Accordingly, your employer can set the conditions of your employment much as it sees fit (short of legally actionable discrimination). The includes when or whether to schedule you to work. For your part, you can either accept your schedules, complain but risk termination, or quit.
