Is it legal to change one’s hours without notice?

Can they schedule you on your days off or ask you to work more hours without 24 hour notice?

The fact is that in "at will" employment arrangements (and most work relationships are), employers can set the conditions of employment much as they see fit or deem necessary. This includes making schedule changes without notice. Your only protection here would be if this action violates the terms of an employment contract or union agreement. Aslo, your treatment must not be due to any form of actionable discrimination.
