If my husband’s parents have a life insurance policy on him and he want to change his beneficiary can he?
They got it when he was a child and they were going to turn it over to me (his wife) and our kids if anything should happen to him. Now there is a problem in the family and personally I don’t trust any of them to do what they said.

So I am not sure what you are asking? Are you asking if your husband can change the beneficiary? No. The owner/holder of the life insurance company is the only one who can, not the beneficiary.
In terms of then what happens -- you can consult with an estate planning attorney in Florida to discuss whether you should try a trust or will or both to then transfer the life insurance policy proceeds going to your husband to you and your children if he predeceases you or to the family trust.
