If I was let go from employment because I couldn’t work overtime hours due to childcare issues, would I be eligible to collect unemployment benefits?
I am a single dad; I don’t make a very good salary and out of that have to pay rent, after school program for my daughter and after that child care until I get home at 9:30 pm. My company recently implemented “mandatory” overtime which is to be done on Saturday from 2 pm to 6 pm. and followup OT the next day (Sunday) if all work orders fulfilled. This would be every 3rd Saturday and we were told to make arrangements and if we couldn’t comply then “there’s the door”. Any additional money that I would have to pay out would cause a hardship.

Based upon the facts of your question you seemingly would be entitled to unemployment benefits since you were terminated by your employer. I would go immediately to your local unemployment office and make a claim for such benefits. Your former employer then has a certain time period to contest such a claim.
