If I was involved in a minor car accident on private property so the police would not make a report, would the mere fact that we called them serve as contemporaneous evidence and help our case?
Another car backed into mine and the driver admitted fault to m, but the police would not come to write a report when my wife called. Now, the other driver is stating that I rear-ended him, even though I was completely stopped.

The fact that you called the police is not evidence of anything other than the fact you believed (correctly) that the police should be contacted when there is an accident. Ay most, it can be the basis to infer that you believed the other driver, not you was at fault, which proves nothing but your state of mind or belief it does not prove who in fact was at fault.
