I was ‘hired’ and started a job, but they aren’t having me complete my paperwork until the following Wednesday. Is this legal?

I started a new job inwhich today was my official first day. However in asking
about paperwork, such as my w-4, i-9 and payroll documents I was told they would
do that next week. Should this stuff be done the day I start?

While it is certainly better and more typically to do it Day 1, as long as it gets done in time to process your first payroll--which, after all, is the purpose of that documentation--then they have done nothing wrong. If they don't pay you on time (or at all), then here would be a violationn
