What can I do if I live in a townhouse and my neighboor had 3 video cameras aimed at my back/front doors, patio and shed?

I have asked for them to come down but she said that she’s not moving them. I feel as though I have no privacy.

You can sue your neighbor for invasion of privacy.  Invasion of privacy is a serious interference with your right to be let alone and protected from unwarranted and undesired intrusions.
