What to do if I’ve been offered a position with a company as a manager and my duties will be to receive checks in my name, cash them, take my 15% and then forward the rest via western union?

Is there any legal or tax issues I should be concerned with before excepting the position?

I suggest that you consult further with an independent business attorney about the position that you have been offer. To me it sounds shady where you would be receiving business checks in your name and not in the company's name and you take a 15% cut.

You could be personally taxed on the full amount of the checks and most importantly, you could be part of an underhanded business scheme that you do not want to be part of.
