What to do if I have a nolle prosequi on my record that continually shows up with a background check?

I was never arrested or even brought to court. What can I do to get this removed?

Unfortunately for you, the dismissal of the criminal charge against you will show up on any background check of you even if you were not arrested. The way to eliminate the "show" of the criminal matter is to have the file against you sealed by the court. I suggest that you consult with a criminal defense attorney to assist you in such an endeavor.
