if I am paying until the end of my lease but moving out early, can the landlord rent out before my lease exires?

I am giving a 60 day notice as of the 1st of next month. My lease runs 3 months. I plan on paying until the end of the lease but I am leaving a month early. My landlord cannot rent out my apartment until the end of the lease, correct?

Correct.  Your landlord can not even enter your apartment - except what he or she would have the right if you were still there: emergency, upon notice for a legitimate reason like repair, etc. - as you are still the legal tenant.  Good luck.
