You may sue as soon as the bill is past due. If the contract, agreement, terms of service/sale specify how long the customer or client has to pay, go by that time frame. If there is no stated time frame, go by the industry norm or standard; and if your industry doesn't have a particular norm or standard, then "net 30" is a sufficiently common time period for payment that once the bill is 30 days or more late, you could take action.
