Can I create a contract that would require a female to give me a percentage of gifts/money that a rich man gives her if I hook them up?

I have a way of persuading, and know where to find financially stable generous men. Can I make a contract where if I set up a girl with a financially stable man, I get a percentage of any and all gifts / money that he gives to her?

No, you cannot do this. Essentially, what you are discussing looks an awful lot like a form of prostitution, which means that (1) if you try to enforce the contract and the woman doesn't want to pay, if a court concludes it is a contract in regards to prositution, they will not enforce it, as an illegal contract; and (2) you could find yourself facing criminal charges. (Step back for a moment: you're discussing an arrangement in which women are gifted by men for providing "companionship" and the women in turn pass some of that money on to a handler who arranged for the meeting--what does that sound like?)

There are ways to legally be a matchmaker; you are better off following the business models of professional matchmakers, which have stood the legal test  of time, then an arrangement like the one you describe.
