Can an employer make you stay for another shift if another employee calls off?

What is required of a nursing home CNA to stay past their required shift if another CNA calls off for the next shift with little to no notice at all?

Do you have an employment contract or union agreement that sets your hours and/or schedule? If not, then as an "at will" worker, your employer can set your workload much as it sees fit (absent some form of legally actionable discrimination). For your part, you can either refuse to work any additional time but risk termination, or quit.
