my company will pay my OT today labor dayi’ll have worked 40hrs by the end of the week, but I have to work an additional 8-10 hours before I begin to collect OT.

You must be paid overtime after WORKING 40 hours in a week. However, a company does need to count non-work, but paid, hours, like holiday pay, vacation pay, sick pay, etc. in calculating how many hours were worked for overtime purposes. So if you worked, say, 9 - 6 Tuesday - Friday, or 36 hours, but Monday was 8 hours of paid holiday, you don't get overtime.
