What is my responsibility if a business forgot to include sales tax on items it sold to me and nowit’s claimingI owe them on paid statements from a year ago?

I am a dentist who for the past 1year have been outsourcing my crowns to be made by a local dental lab. Recently they sent me a notification that they forgot to add sales tax on all the past work they have done and said I now owe them about $1000 going back a year. I still have all my past monthly statements which I have already paid off and have already filed my taxes. Can they collect on an error on their part?
