Is the insurance company required to provide copies of all paperwork they are using to caluclate the settlement to me? Car acident 1 year ago, I was a passenger in a car that was not at fault. Injury is knee, had surgery.

No, they are not required.  However, if they are saying that perhaps there is something in your medical records that is causing them to give you a reduce settlement, it would only stand to reason that they need to tell you in order that you can understand why your settlement would be reduced.  You may not get a full explanation.  You didn’t go into the reason for your question.  Are they saying they have information that makes your settlement lower?
