What visa can I apply for?
I have an offer of employment as a kayak
instructor in Michigan from May-October.
There are no more H2-B visas available
this year thus I would like some advice
as to which visa I can apply for please?

there's probably not much you can do by way of a work visa for this type of position. it is not something that would qualify for a work visa outside the H-2B classification. if you are someone with a lot of experience and accolades in this area and can qualify for a O-1 visa, that would probably be your only option.
