I am being asked by the insurance
company of the vehicle that struck my
car to provide a recorded statement of
the incident.

Yes, you should agree to the recorded statement.  This is standard operating procedure.
If you were injured in the accident, you should not discuss your injuries.  Only discuss property damage.  The insurance agents know this and won't ask questions about your injuries.
The purpose of the recorded statement is to obtain the facts as to what occurred in the accident.
