If I own a car detailing shop and am leasing a building on the property, is it legal for the property manager to ask for my employee’s SSN’s and ID’s or do I am I entitled to privacy so as not to have to disclose this information?

If the lease is up for renewal or is being negotiated in the first place, the property manager can ask for this information as a condition of leasing to you it is perfectly legal to ask for this information, and if you refuse to provide it, they could refuse to lease to you.
If you are in the middle of lease term, while they can "ask" for it--anyone can ask for anything--you would not have to provide it unless the lease itself i.e. the current, in-effect lease requires you to provide this information.
