If I almost ate a piece of glass from the inside of a bratwurst, what can I do?

Actually, there really isn't much that you can do from a legal perspective. A personal injury claim is based on either intentional or negligent conduct thst results in damages (e.g. a personal injury). Since you did not consume the glass (thankfully), you have no grounds for such a suit.
