My niece (16 yrs old) signed a fitness club contract in Ohio. They are threatening to sue her for $3000 for early cancellation. What should she do?

The age of majority in Ohio is 18; that is the age of "adulthood".  This means, among other things that a person can legally sign a contract.  However, a contract signed by a minor (ie someone under 18) is voidable by the minor unless it is for a necessity such as food, clothing, shelter or the like.
