In most states, health insurance is by the month, so no matter what your employer says, you couldn't be dropped before the end of the month in which you quit.  You should still be notified of your right to buy your continued coverage under COBRA.  It's very important that you ask about this, if you haven't heard, and complete the forms and pay the premium no later than the first of the month following your termination.
