If you are not leaving assets to your children, do you need to mention them in the Will?

You should specifically disinherit them.  If they are omited without reference, it may lead to a challenge indicating that either that perhaps they were not born at the time or there were other issues, such as mental defect or undue influence, that led to their omission.
