If I rented a room in my apartment, does this constitute "sub-leasing"?

Yes, a sublease (or sublet) is when the person who is the primary tenant (i.e. who rents from th property owner or the property owner's agent) then in turn rents out some of his/her space to another. If you rented out a room in your apartment, you were subleasinng or subletting it.

I'm not sure what the rest of your question is: if you had a month to month, then the sublet will extend as long as you both keep renewing it. Staying 3 months would bein keeping with a month-to-month sublet.
