If an LLC is dissolved while in the middle of a lawsuit, can the individuals be held liable for any payments due?

That answer depends.  Were these contracts made between the LLC and third parties?  If yes, the LLC liability shield applies, even after dissolution.  Did the officers personally sign off on the contracts? If yes, then they will continue to be personally liable.
