If your spouse has gotten coverage through some other source (her job), you may drop her at will--that is a life event qualifying for a change in coverage.
Quitting your job of course poses serious risks, not least of which is that they do not hire you back. Before contemplating that, call the health insurer directly and ask how you might be able to drop your spouse--there may be some other to do it, such as during "open enrollment," the annual period of time when employees may make changes to their plan.
