Hello, there are two parts two your situation.  The employee who has been taking the gift cards and money is criminally liable and you can pursue the employee  on a civil level as well, by pursuing a civil theft charge, which will enable you to recover what was stolen.  If you have not already terminated the employee, you should do so as fast as possible.  Preferably, state in writing why this employee is being terminated or at a minimum ensure that any further conversation between you and the employee is observed by someone else in your office.

You should contact your local District Attorney's office and file a civil complaint against her.  Make sure that you have the proof necessary to back up your claim.

You also need to terminate her from her job and do so with someone else present.  Be clear about why she is being terminated.  Make sure that she returns all keys, etc. and that you back up her computer if she uses one at the office.  Good luck.
