If I filed for divorce but haven't had the sheriff deliver the papers yet, can I change my mind and not have the papers delivered?

Yes.  It doesn't sound like this has taken place yet, but if the summons has been issued already by the clerk of court, and it's gone to the sheriff -- you'd have to contact the sheriff's office to request them to not serve your spouse.
