Can my employer require me to come in off the clock to take work related quizes?

My boss is requiring me to come in for an hour unpaid and take tests about our restaurant and "the brand".

He can require you to come and take the test, but you have to be paid for it if you are an hourly employee (i.e. paid an hourly wage, not an annual salary). Hourly employees must be paid for all hours worked, whether that is during their normal shift or offshift, and whether it is their normal job or something else the employer requires them to do--like a test about the restaurant.
